角蛋白酶及其应用研究进展

Research Progress of Keratinase and Its Application

  • 摘要: 角蛋白主要存在于动物的毛发、鳞片、羽毛、蹄、角等部位,由于其分子间富含二硫键以及疏水氨基酸,使得角蛋白难以被常规蛋白酶降解,而角蛋白酶可以在较为温和的条件下高效的降解角蛋白。目前角蛋白酶的基因工程研究已发展到基因改造的阶段,并且角蛋白酶的应用领域也被逐渐拓展。文中综述了角蛋白酶的来源、分类、性质、基因工程研究、作用机制及应用,为今后的角蛋白酶研究提供参考。

     

    Abstract: Keratin is mainly present in the animal hairs, scales, feathers, hooves, horns and others, it is difficult to be degraded by conventional proteases due to its abundant disulfide bonds and hydrophobic amino acids, but keratinase can attack keratin more efficiently in the gentle conditions. Recently, the genetic engineering of keratinase had been developed to the stage of genetic modification, and the application of keratinase has also been gradually expanded. The origins, classification and properties of keratinase has been introduced by this paper. And the gene engineering of keratinase, mechanisms and applications were also reviewed, and it had provided a reference and direction for the further study of keratinase.
