生物基可降解抑菌食品包装膜的研究进展

Research Progress of Bio-based Biodegradable Antibacterial Food Packaging Films

  • 摘要: 食品包装作为食物抵御污染和微生物的第一层屏障,是食品生产中不可或缺的一部分,对食品安全、质量品质有着巨大影响。目前传统塑料包装的大量使用给生态环境带来了严重威胁,与此同时,由于微生物污染而导致的食源性中毒等案例层出不穷。在此背景下,以天然生物材料为基质制备的可降解以及具有抑菌性能的复合薄膜,在食品包装中有广阔的应用前景,是未来食品包装材料发展的总趋势。本文从生物基膜材料(多糖类、蛋白质类、脂质)方面综述了可降解膜和抑菌膜的研究进展及其在食品中的应用,并阐述了不同抑菌剂(合成抑菌剂、天然抑菌剂)在抑菌膜中的选用,以及抑菌剂的添加对薄膜包装性能、抑菌性能等方面的影响。最后探讨了相关包装领域存在的不足,并展望了可降解抑菌食品包装膜在未来应用的发展前景。

     

    Abstract: As the first barrier for food against pollution, food packaging plays a crucial role in food production, which greatly impacts both the quality and safety of food. Recently, the increasing use of conventional plastic packaging has posed a significant threat to the environment. Meanwhile, cases of foodborne poisoning caused by microbial contamination emerge endlessly. On this background, biodegradable antimicrobial film prepared with natural biological materials has a broad application in future food packaging materials. This article reviews the research progress of biodegradable and antimicrobial films based on biological materials (polysaccharides, proteins, and lipids) and their application in food packaging. And introduces the application of different antimicrobial agents (Synthetic and natural antimicrobial agents) in antimicrobial films. Moreover, discusses the effect of the addition of antibacterial agents on the properties of packing and the antibacterial activities of films. At the end of it all, the shortcomings of food packaging-related fields are discussed. The development of biodegradable antimicrobial food packaging films in the future is prospected.
